🍖 Mutton Sukka Recipe – Spicy South Indian Dry Mutton Fry
Mutton Sukka is a traditional dry-style mutton fry from Tamil Nadu, made with simple spices, curry leaves, and grated coconut. It’s spicy, aromatic, and a perfect side dish for rice, rasam, or even chapati.
📋 Ingredients
🔸 For Pressure Cooking Mutton:
- Mutton (with bone) – 500g
- Turmeric powder – ¼ tsp
- Ginger garlic paste – 1 tsp
- Salt – ½ tsp
- Water – 1 cup
🔸 For Sukka Masala:
- Oil – 3 tbsp
- Onion – 2 medium (sliced)
- Tomato – 1 large (chopped)
- Ginger garlic paste – 1 tbsp
- Curry leaves – 1 sprig
- Red chili powder – 1½ tsp
- Coriander powder – 1½ tsp
- Pepper powder – 1 tsp
- Fennel seeds – ½ tsp
- Grated coconut – 2 tbsp
- Salt – to taste
- Coriander leaves – for garnish
👨🍳 Instructions – Step-by-Step
Step 1: Pressure Cook the Mutton
- In a pressure cooker, add mutton, turmeric powder, salt, ginger garlic paste, and 1 cup water.
- Cook for 4–5 whistles or until the mutton turns soft and tender.
- Once done, set the mutton and stock aside.
Step 2: Prepare the Sukka Masala
- Heat oil in a heavy-bottomed pan.
- Add fennel seeds and curry leaves. Sauté until aromatic.
- Add sliced onions and fry till golden brown.
- Now add ginger garlic paste and sauté till the raw smell disappears.
- Add chopped tomatoes and cook until they turn soft and mushy.
Step 3: Add Spices and Mutton
- Mix in red chili powder, coriander powder, pepper powder, and salt.
- Add the cooked mutton along with ½ cup of the stock.
- Cook on medium heat, letting the masala coat the mutton well.
Step 4: Roast and Finish
- Add grated coconut and roast the mutton on low flame until it becomes dry and slightly crispy.
- Stir occasionally to avoid burning and enhance flavor.
- Garnish with chopped coriander leaves and switch off the flame.
