🍖 Mutton Sukka Recipe – Spicy South Indian Dry Mutton Fry

Mutton Sukka is a traditional dry-style mutton fry from Tamil Nadu, made with simple spices, curry leaves, and grated coconut. It’s spicy, aromatic, and a perfect side dish for rice, rasam, or even chapati.


📋 Ingredients

🔸 For Pressure Cooking Mutton:

  • Mutton (with bone) – 500g
  • Turmeric powder – ¼ tsp
  • Ginger garlic paste – 1 tsp
  • Salt – ½ tsp
  • Water – 1 cup

🔸 For Sukka Masala:

  • Oil – 3 tbsp
  • Onion – 2 medium (sliced)
  • Tomato – 1 large (chopped)
  • Ginger garlic paste – 1 tbsp
  • Curry leaves – 1 sprig
  • Red chili powder – 1½ tsp
  • Coriander powder – 1½ tsp
  • Pepper powder – 1 tsp
  • Fennel seeds – ½ tsp
  • Grated coconut – 2 tbsp
  • Salt – to taste
  • Coriander leaves – for garnish

👨‍🍳 Instructions – Step-by-Step

Step 1: Pressure Cook the Mutton

  1. In a pressure cooker, add mutton, turmeric powder, salt, ginger garlic paste, and 1 cup water.
  2. Cook for 4–5 whistles or until the mutton turns soft and tender.
  3. Once done, set the mutton and stock aside.

Step 2: Prepare the Sukka Masala

  1. Heat oil in a heavy-bottomed pan.
  2. Add fennel seeds and curry leaves. Sauté until aromatic.
  3. Add sliced onions and fry till golden brown.
  4. Now add ginger garlic paste and sauté till the raw smell disappears.
  5. Add chopped tomatoes and cook until they turn soft and mushy.

Step 3: Add Spices and Mutton

  1. Mix in red chili powder, coriander powder, pepper powder, and salt.
  2. Add the cooked mutton along with ½ cup of the stock.
  3. Cook on medium heat, letting the masala coat the mutton well.

Step 4: Roast and Finish

  1. Add grated coconut and roast the mutton on low flame until it becomes dry and slightly crispy.
  2. Stir occasionally to avoid burning and enhance flavor.
  3. Garnish with chopped coriander leaves and switch off the flame.
