Andhra Spicy Chicken Fry – Kodi Vepudu (Dry Style)

🥣 Step 1: Marinate the Chicken
In a bowl, combine 500g chicken pieces, 1 tbsp ginger garlic paste, 1/2 tsp turmeric powder, 1.5 tsp red chilli powder, salt, and 1 tsp lemon juice. Mix well and rest for 30 minutes.
🌿 Step 2: Prepare Spice Masala
Dry roast 1 tsp coriander seeds, 1/2 tsp peppercorns, 2 dried red chillies, 2 cloves, 1-inch cinnamon, 1 tsp fennel, and 1 tbsp dry coconut. Cool and grind into coarse masala.
🧅 Step 3: Sauté Onions & Herbs
Heat 2 tbsp oil in a pan. Fry curry leaves and slit green chillies. Add 1 chopped onion and sauté until golden brown.
🍗 Step 4: Cook the Chicken
Add the marinated chicken. Stir-fry for 5 mins on high, then cover and cook on low until 80% done (about 10 mins).
🌶 Step 5: Add Spice Masala
Uncover, add the ground masala. Stir well and cook on high until dry and coated. No water is needed.
🔥 Step 6: Final Tempering
Heat 1 tsp ghee separately. Fry a few curry leaves and 1 slit green chilli. Pour over the chicken fry and mix.
🍽 Step 7: Serve Hot
Serve with rasam rice, parotta, or biryani. This is a dry-style, spicy Andhra fry that pairs perfectly with any South Indian meal.
