About This Dish
Nihari is a rich and spicy slow-cooked mutton stew that originated in Mughlai cuisine. Traditionally eaten as a breakfast dish in North India and Pakistan, it’s now a popular main course served during special dinners and celebrations.
Ingredients
- 500g mutton (with bone)
- 2 onions (thinly sliced)
- 1 tbsp ginger garlic paste
- 1/2 cup yogurt
- 3 tbsp Nihari masala (store-bought or homemade)
- 4 tbsp oil or ghee
- Salt to taste
- 4 cups water
- Fresh coriander and ginger juliennes for garnish
Step-by-Step Instructions
- Heat oil or ghee in a large pan. Add sliced onions and sauté until golden brown.
- Add ginger garlic paste and cook until raw smell disappears.
- Add the mutton pieces and fry until the meat is slightly browned.
- Stir in yogurt and cook for 3-5 minutes.
- Add Nihari masala and salt. Mix well.
- Pour in water, bring to a boil, then lower the heat and cover with a tight lid.
- Slow cook for 2 to 3 hours or until meat becomes tender and stew thickens.
- Garnish with fresh coriander and ginger juliennes before serving.
Serving Suggestions
Serve hot with naan, roti, or steamed basmati rice. Add lemon wedges and raw onion rings for added flavor.
