Chicken Bhuna – Thick & Flavorful North Indian Chicken Curry

Chicken Bhuna is a semi-dry, intensely flavorful North Indian curry made by slowly roasting marinated chicken with aromatic spices until thick and rich. The term "Bhuna" refers to the technique of sautéing or roasting the masala to bring out deep flavor.
Ingredients
- 500g chicken (bone-in or boneless)
- 2 large onions (finely sliced)
- 2 tomatoes (finely chopped)
- 1 tbsp ginger garlic paste
- 1/2 cup thick curd (yogurt)
- 2 tbsp oil or ghee
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Step-by-Step Instructions
- In a bowl, marinate the chicken with curd, turmeric, red chili powder, and salt. Let it rest for 30 minutes.
- Heat oil in a pan. Add onions and sauté until golden brown.
- Add ginger garlic paste and fry until fragrant.
- Add chopped tomatoes and cook until soft and oil separates.
- Add coriander powder and mix well.
- Add the marinated chicken to the pan and cook on high heat for 5 minutes.
- Lower the heat and continue roasting (bhuna) the chicken for 15–20 minutes, stirring occasionally.
- Once the masala thickens and coats the chicken, sprinkle garam masala and mix.
- Garnish with fresh coriander leaves and serve hot.
Serving Suggestions
Best served with naan, roti, paratha, or jeera rice. It also pairs well with plain curd or onion raita.
